Brown Lentil: Egyptian Koshari

Very delicious recipe of brown lentil. The Egyptian Koshari, one of the most famous traditional Egyptian dishes. It sells very well in the resturants as it is cheap, affordable, nutrious and delicious. It is a mixture of brown lentil, pasta , rice (optional) and what gives it special flavor is the vinegar, the raw garlic and the chili powder all added to the tomato sauce. The vinegar, the garlic and the cili powder are great combination to give spicy and great taste. My husband doesn't like this dish very much, however he eats it with relish. He says that people invented it from the leftover food, so what! it is still a great and tasty dish! I love Koshari so much, I wish I could make it alot but I will end up eating most of it alone.

Ingredients:

1 cup brown lentils.

1 cup cooked rice or leftover rice (optional).

1 cup cooked small size pasta (Ditalini).

1 cup tomato sauce.

3 large onions, finely chopped.

3 minced garlic gloves.

1/3 cup White vinegar.

½ tsp chili powder.

Method:

1- In a medium saucepan put the brown lentils and cover with water , ¼ tsp salt, bring to boil then reduce heat and leave until the lentils is cooked. ( It takes around 20 min). Drain the lentils using colander.

2- Deep fry the chopped onion.

3- Add the minced garlic, the chili powder and the white vinegar to the tomato sauce.

4- Mix the cooked lentils, the small pasta, the rice.

5- Add the tomato sauce at the top and sprinkle generously with the fried onion.
