Stuffed Tortilla ( Rukak)

This dish is stuffed Egyptian tortilla. The tortilla is stuffed with cooked ground meat, then the tortilla is soaked with very hot stock and the top is grilled, that’s it.

I make it the easy and the healthy way. I used to hate making it because of the messy and difficult way most Egyptians do it. This is when they soak each tortilla in the hot stock and then spread butter with every layer which is messy and boring. I discovered a lot easier way to do it so I no longer hate to make it and it's no burden to make it all anymore.

The dish is one of my favorites. My daughter loves it and asks me to make it for her whenever she is bored with other food. The Egyptian tortilla is different from the Mexican one you find in the stores. It is dry and   crispy, we usually buy it ready made, but you can make it at home as it is very easy to make. I included how to make it at home.

Ingredients of the Egyptian tortilla:

4 cups white flour.

1 tsp salt.

Water

Method:

1- Gradually add water to the flour, knead it until a non sticky dough is formed.

2- Divide the dough into medium size balls and leave it to rest for half an hour.

3- Lightly dust a table with flour. Use a roller to spread the dough balls into a very thin circles, squares or rectangles, depending on the shape of the baking tray which you’re going to use.

4- Heat a large non sticky frying pan and put the dough you spread in number 3 one by one until it is cooked, it is like a bread so you will know when it is cooked.

5- Leave it to dry, it won’t take long, perhaps half an hour.

Ingredients of the filling:

½ kg ground meat.

One large finely chopped onion ( chop it in the food processor).

Salt and black pepper to season.

Method:

In a medium saucepan mix the ground meat and the onion, season with salt and paper and cook on medium-low heat for 20 min.

Ingredients for the rest of the recipe:

3 cups of very hot Stock (beaf or chicken stock).

2 or 3 tbsp melted butter or ghee.

Method for the rest of the recipe:

1- In a baking tray put 3 pieces of the tortilla, top it with the cooked grounded meat, put 3 more tortila pieces of over the ground meat.

2- Pour the boiled stock over the tortilla, 

3- Cover it with plastic for half an hour until the tortilla absorbs the stock and becomes soft. ( you might need to drain the excess liquid if the stock was extra).

4- Cut it into squares or wedges.

5- Melt 2 or 3 tbsp of butter and spread it on the top of the tortilla.

6- Grill the top until golden color.
