Zucchini With White Sauce

I wouldn't consider this dish an Egyptian dish but it is very common in Egypt. I make it the easy way as I don't add minced meat to as most of the Egyptians do. I prefer to make it without it. We usually eat it with Egyptian bread but you can eat it with any kind of bread that is used for wrapped sandwiches. The dish is easy, delicious and quick to make.

Ingredients:

1 kg zucchini cut into longitudinal slices, or strips.

1 tbsp oil.

¼ tsp salt.

Pinch of black pepper.

For the white sauce:

3 tbsp butter or ghee or oil.

3 tbsp white flour.

1 liter milk.

¼ tsp salt

Pinch of black pepper.

To sprinkle on top ( optional):

A small piece of butter, or Mozzarella or shredded Cheddar cheese.

Method:

1- Stir fry the zucchini in the 1tbsp oil on high heat until tender.

To make the white sauce:

-On a medium sauce pan, melt the butter on a medium heat, add the flour and stir to blend.

-Add the milk and stir with a whisker so that all the flour blends with the milk and thickens.

-Season with salt and pepper.

-Once it starts to boil, turn off the stove.

2- Put the zucchini (you cooked in step 1) in an oven tray.

3- Cover the zucchini with the white sauce.

4- Sprinkle the top with a small piece of butter, or mozzarella or cheddar cheese.

5- Grill the top until golden brown.
